Main Meals Recipes
- 4 lettuce leaves, chopped or
- 6 cherry tomatoes
- 2 radishes, sliced
- 2 spring onions, sliced
- 50g cucumber, cut into small pieces
- 25g flat-leaf parsley, chopped
- 25g min leaves, chopped
- Avocado, chopped
- Serve with roasted mushrooms
- For the dressing: ½ garlic clove crushed, 1tbsp lemon juice, 1tbsp olive oil
- For the dressing, mix the crushed garlic with a pinch of salt, the lemon juice and olive oil. Set aside until ready to serve.
- Combine the salad ingredients in a bowl, season and toss with the dressing just before serving.
